At the Hacienda Pinilla Beach Club, you will find delectable menu items with each dish featuring its very own touch of Costa Rica. In honor of the traditional Costa Rican dishes featured on the Beach Club menu, the chef would like to share the recipe for the unique Costa Rican dish “Chifrijo”.

Spectacular Sunsets & Delectable Cuisine at the Hacienda Pinilla Beach Club

Chifrijo is a dish of 100% Costa Rican origin, unlike the casado, gallo pinto, or olla de carne, which are all dishes that are well known throughout the entire Central American region and only vary in name from country to country. Unlike these other dishes, Chifrijo is exclusively Costa Rican. The word Chifrijo is composed of the first letters of two of the ingredients: chicharrones (fried pork meat) and frijoles (beans). This dish was first prepared by Miguel Angel Cordero Araya, owner of the restaurant “Cordero’s No. 1” located in Tibás, San José.

The Hacienda Pinilla Beach Club’s Exclusive Chifrijo Recipe:

• White Rice
• Beans in their sauce (preferably tender kidney beans). Other recipes may use common red, white or black beans.
• Chicharrón (fried pork meat- at the Beach Club we use only meat, some places use skin too).
• Pico de gallo (tomato, onion, cilantro, salt, pepper and lemon juice)
• Avocado
• Chips (Corn tortillas cut into triangles and made into chips)

Usually the dish is served in a bowl by layering rice, beans with the sauce, the chicharron, and finally topped with pico de gallo and avocado. The tortillas are placed around the bowl for scooping the Chifrijo. The dish should be served hot, with lime slices on the side. At the Beach Club, we make our Chifrijo by adding some of our homemade hot sauce to the pico de gallo.
